Quick. Easy. Heavenly delicious.
This recipe has proven to be the all time favorite. As a child I was constantly begging my mom to make me ‘those nice sandwiches in the oven’. (I secretly suspect she in turn was asking the same from her mother.) Fast forward, 20 years later the husband often asks me if I can prepare the ‘tasty egg and cheese ones’. Needless to say, the answer is always positive.
Egg and cheese sandwiches (makes 2)
1 medium sized egg
100 gr feta cheese
2 slices of bread
(optional) chili flakes
Preheat the oven to 200 C / 400 F (only from above!).
Whisk the egg lightly. Break the cheese into small pieces with the help of a fork, and add it to the egg. Stir well until you have an even mixture. (Optional) Add the chili flakes, and mix again.
Distribute the mixture evenly on the bread slices and put them in the oven. Bake for some 20 minutes or until they have a nice golden finish.
