Carrot Salad Recipe - WorldTasting

I first encountered this salad somewhere around the Christmas holidays. My mom and I were sitting in a random restaurant, on a table for four, just because we had to fit all the shopping bags somewhere. I was blankly staring at the menu when my eyes got caught by the carrot salad. You see, I am not really a carrot person but this number seemed to be special. So I took the leap.

Ever since I have been praising this salad at every possible occasion. I have also promised (myself) at least a dozen times that I should prepare it. Truth being told, after so much talking about it, I kind of forgot what exactly was in that salad. I did remember the main ingredient, that is to say the carrots, and I had a vague memory of the way it should taste.

Just recently I embarked on a mission to redefine it. A couple of trials later, the result tastes even better than I remember.

Carrot Salad with a Twist (1 serving)


2 carrots, shredded
10-15 dried cranberries
20 gr blue cheese of your liking, crumbled
a handful of walnuts, coarsely chopped
1 tablespoon lemon juice

Directions:

Mix all ingredients in a bowl and enjoy this symphony of tastes!
