No more second thoughts when the sweet cravings take over, because I finally found the perfect recipe for homemade healthy energy bars. Oh, and what is more – they require only three ingredients and not more than five minutes of preparation. Did I get you interested? Here’s the secret to happiness:
You need nuts, dried fruit and pitted dates in equal parts. I decided to go for almonds and apricots. Put all of the ingredients in a food processor and pulse a few times to break them in small pieces. Afterwards continue to process for 1-2 minutes until you get a clump of all ingredients. Lay a piece of plastic wrap and dump the mixture onto it, press it evenly into a thick layer and let it solidify in the fridge for at least an hour. (The longer you let the bar dough in the fridge, the better it becomes, so be patient.) When ready, remove the wrapping, cut the bar dough into rectangular pieces with a sharp knife. Enjoy your daily dose of happiness, and store the rest in the fridge.
